From the bottom up it's almond sponge cake, chocolate nibs, dark Salango mousse, chocolate sponge cake, more dark Salango mousse, a dark chocolate glaze, a macaron cookie, more chocolate nibs, a cocoa powder dusted chocolate ruffle and a printed square of 70% cocoa Salango chocolate.

It's a beauty.
I could go on and on about owner and Chef Janvier's qualifications or the process he uses to create his salango chocolate blend. But I don't think that's why you're looking at these pictures. You're looking at them because they look delicious!
And it was. In fact, I think the Salango just knocked my all time favorite Fleur de Cocoa dessert, the Marion, into second place!
